Perfect Pumpkin Protein Brownies with a protein pumpkin cheesecake swirl! These healthy pumpkin protein powder brownies are rich in chocolate and pumpkin spice flavor, but low calorie and sugar free!
Wet Ingredients:
cupPumpkin Puree150g (not pumpkin pie filling)
cupNon-fat Greek Yogurt150g
cupUnsweetened Almond Milk160ml
tbspPeanutAlmond or Cashew Butter, 48g, High protein recommended
Dry Ingredients:
cupUnsweetened Cocoa Powder40g
cupWhey-Casein Chocolate Protein Powder30g
cupWhey Chocolate Protein Powder30g
scoopUnflavored Whey-Casein Protein Powder15g
cup1:1 Gluten Free Baking Flour30g, or regular flour
tspStevia Sweetener= ¼ cup Sugar
tspBaking Soda
Pumpkin Swirl:
cupPumpkin Pureenot pumpkin pie filling 80g
cupReduced Fat Cream CheeseSoftened, 56g
cupNonfat Greek Yogurt56g
cupVanilla Protein Powder22g
Egg White31ml
tbspGluten Free Baking Flour15g, or regular flour

Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
In a large bowl, whisk pumpkin puree, greek yogurt, milk, nut butter and vanilla extract.
In another bowl, whisk cocoa powder, chocolate protein powder(s), unflavored protein powder, flour, stevia sweetener, pumpkin pie spice, baking powder and baking soda.
Add wet mix to dry, and gently fold until just combined.
DO NOT OVER-MIX or protein powder will make the brownie dense.
Pumpkin Swirl:
In a bowl, stir softened cream cheese, Greek yogurt and pumpkin puree.
Add in egg white and mix.
Add protein powder, flour and pumpkin spice and mix.
Assemble and Bake:
Transfer ½ batter into pan, spread and smoothen.
Spread ⅔ pumpkin mix and cover brownie batter.
Top with rest of the brownie batter and spread to cover.
Add tablespoons worth of pumpkin mix and swirl into a pattern.
Bake for 27-30 minutes. Toothpick inserted into the center should come out mostly dry.
Remove from oven and let cool completely.
Cut into slices and enjoy!
