An amazing Chickpea Protein Skillet Cookie for a gluten free and Vegan treat. This healthy skillet cookie is a great chickpea protein powder dessert recipe to satisfy those cravings.
cupChickpeasDrained can (390g) or Cooked from dry (110g)
cupUnsweetened Applesauce120g
cupVanilla Protein Powder30g, 1 scoop
cupPeanut Butter Powder24g
tbspCreamy Peanut Butter32g
tspVanilla Extractoptional; if protein powder is not strong enough
tbspChopped Chocolate or Chocolate Chips42g, Sugar free recommended below

Preheat oven to 350°F and grease an 8” oven-safe skillet.
Rinse chickpeas, place in a food processor and blend until coarse and grainy, about 10 seconds.
Place all ingredients (except chocolate chips) in food processor - applesauce, protein powder, peanut butter powder, peanut butter, vanilla and baking powder - and process until smooth, scraping down the sides if necessary.
Fold in chocolate, reserving some for the top.
Pour batter into pan/skillet and spread evenly with a spatula or back of a spoon.
Top with remaining chocolate chips.
Bake for 20-22 minutes; A toothpick inserted into the center should come out dry, and top should be cracked.
Remove from oven and let cool.
Cut into slices and enjoy!
