Easy No Bake Matcha Brownie Protein Bites made with oats, protein powder and a few simple ingredients. Matcha Chocolate protein bars are gluten free, sugar free and vegan, and perfect for a quick dessert or snack recipe.
Brownie Layer:

Line a muffin pan with cupcake liners (or use loaf pan and cut into pieces later).
Brownie Layer:
In a bowl combine oat flour, coconut flour, chocolate protein powders and cocoa powder.
Add applesauce and almond milk (little at a time) and mix to make smooth dough.
Add more milk if mix is too dry.
TASTE THE BATTER and add more sweetener (stevia or monkfruit) if needed.
Divide into 9 portions (reserve some for topping) and press down into muffin cups (or pan). Smoothen tops with back of spoon or spatula.
Matcha Layer:
In a bowl combine oat flour, coconut flour, vanilla protein powder and matcha green tea powder.
Add in almond milk and mix. Mixture should be thick.
Add more milk if mix is too dry.
TASTE THE BATTER and add more sweetener (stevia or monkfruit) if needed.
Divide into 9 parts, and press down above brownie later.
Spread extra crumbles of brownie mixture on top.
Remove from muffin cups (or from pan and cut into 9 pieces).
Chocolate topping:
Place chopped chocolate or chocolate chips and optional coconut oil in a large bowl and microwave about 20-30 seconds, stirring halfway, until completely melted.
Allow to cool to slightly.
Drizzle over bites and let harden.
