Combine protein powder, coconut flour, ginger and cinnamon in a bowl.
Pour in the molasses and milk (little at a time) and mix to form a dough. It might look too dry at first, but don’t add more liquid; it will combine.
Spoon out 1-2 tablespoons of mixture at a time and place on a parchment lined baking sheet. You should have 7 portions.
Freeze for about 10 minutes. Roll into balls using clean hands, and then in cocoa powder to coat.
